I suggest you give yourself more than a few hours to make this trip it is absolutely worth it! as the other answerer said, you getting in & out will take some time, I don't know if towards the end of summer it may still be high season, peak times, but he is right the train & bus tour will take at least two hours, if not more, you'll need to plan ahead, or else plan another trip to Paris, as it is one of the best experiences you'll ever have, (I'm sure you know that) I'd rather go to Israel though, depending on how many hours your stop over'll last, I'd go for it if it's several hours, I'd get the visa just in case, if you aren't able to decide until the last minute, at least you have it taken care of.
References :
If you have only several hours (by which I take it you mean not nuch more than three hours) then its not realistic to leave the terminal and get into the city.

The train into Paris and back will consume almost two hours of your time and entering and exiting thru customs and security will take several hours by itself.
